Apostolos Trastelis's special journey in haute cuisine began in 1996 when he opened Spondi restaurant.
The most emblematic restaurant in the country has since redefined the concept of haute cuisine and has received a wealth of worldwide distinctions. Thus, Spondi received the first star from the iconic dining guide Michelin in 2002 and the second in 2008, being the only restaurant in Greece currently holding such a distinction from the gold ”book" of fine dining . In addition, it is voted among the 100 best restaurants in the world, while it is also a member of the ultra premium family of Relais & Châteaux and is the only Greek restaurant included in the American restaurant guide Zagat.
His next business step was Hytra restaurant, which was also awarded a Michelin star in 2010, a distinction it maintains to this day. Soon after he purchased Galazia Hytra and Fuga restaurants.
The establishment of a gastronomic and consulting management company was the result of the experience Apostolos Trastelis gained from this long path in gastronomy and the possession of 4 Michelin stars (Spondi **, Hytra *, Galazia Hytra*).
He has collaborated with the most famous restaurant groups and luxury hotel units in the country like Electra Palace in Athens, the four restaurants of Sani Resort in Halkidiki (Water, Byblos, Sea you, Macaroni), Kiku, Cavo Tagoo in Mykonos, Orloff in Spetses, Liostasi in Ios, Porto Carras Grand Resort in Halkidiki, Eagles Palace in Halkidiki, Kinsterna in Monemvasia, Nikki Beach in Porto Heli and Magma by Spondi / Hyatt Santorini.
His obsession for perfection, his high aesthetics but also his true love for gastronomy led him to set very high standards and goals, which he manages to achieve with the help of a very capable team of top chefs, management executives, service, sommeliers, architects, and communication and finance consultants.
